Mix veg Paneer



It's been so many years since I wrote a recipe, so here are some quick steps to follow for my own recipe which all of my friends and family loved it whoever tried.

Note: - You can use any veggies and equal or quantities you like. I have used mix veg frozen veggies pack that I get from Costco.


In a pan , add oil , then add zeera, mustard seeds, clove, cinnamon stick, whole dhaniya seeds, whole black pepper, hing , chopped garlic, green chilli and ginger. After 1 min add onion salt and haldi sauté till onion is soft 

Add tomato , chopped coriander and sauté till tomato is cooked. 

Turn off gas and let it cool down before u make purée. 


After making purée, take a pan add butter, mustard seeds, add purée, add water , salt and garam masala , stir well. Now add mix veg( corn, carrots, beans, peas) and chopped Palak . Add water 1 cup or more if needed to cook veggies. Cover with lid and let it cook for medium to low flame. 

Stir in between to check it doesn’t stick at the bottom of pan 


Once veggies are cooked( it’s ok if it’s slightly undone), if needed add kitchen king masala , red chilli depending on taste and spicy u need. 


After 1 min add whipped cream and paneer cubes , cook at medium flame for 1-2 mins till the cream is cooked and makes curry thick. 

Add water if it’s very thick 

Then turn off the gas and keep it covered

Delicious Healthy Biscuits



Hello Friends ! Here is an awesome tea time biscuits. I eat lot of biscuits with Tea and every time I feel guilty eating so much of unhealthy tempting ones. Finally I was able to figure out lovely biscuit recipe and enjoyed eating it regularly. Yummm ! 




For Chocolate base
1 Cup Multigrain Flour
1/4 tsp baking powder
1/2 - 1 Tbsp choco powder (according to ur taste of chocolate you like)

For OffWhite base
1 cup Multigrain flour
1/4 tsp cardamon powder + nugmet (3:1 ratio)
1/8 tsp cinnamon powder

Wet Ingredients
1 bar of butter
2 cup brown suger
1/2 tsp vanilla extract
2 eggs

Steps:
1) Keep butter outside and bring to room temperature.
2) Mix all the wet ingredients and beat with the electric beater for 7-8 mins
3) Sieve dry ingredents for chocoate and offwhite base in seperate bowl
4) now add half of the wet beated mixture in chocolate and remaining in offwhite base.
5) make dough of both 
6) Cover with the plastic cover or tight bowl and keep in freezer for 15 mins.
7) Now take chocolate dough and roll it in square shape(do similar for offwhite)
8) Now Cut into 3 rectangle parts 
9) Take 2 chocolate part and 1 offwhite, place the layers on one other such that offwhite is in between 2 chocolate. Press gently to combine all layers.[ Do similar for remainging parts ie. chocolate inbetween 2 offwhite] 
10) Again keep in freezer for 5 mins.

11) Take it out and again cut into 3 rectangles as you did earlier. 
12) Now you have 2 with chocolate in middle and 1 with offwhite in middle. place that in between as it was done in step 9. PRess gently from all sides to combine. [Repeat similar for remaining parts]

13) Once again keep in freezer for 3 mins.
14) Then cut pieces, each piece will be formed of checks design
15) Pre heat oven at 370 F
16) Keep the pieces sperately on a tray (layered with parcement paper)
17) Place the tray in oven for baking for 12- 15 mins
18) after 15 mins take the tray out and allow the cookies to cool down.

Healthy and Delicious Oats Coffee Cake

I Love Cakes and have been baking cakes using the cake mix. But those cakes are usually not healthy and can't have daily. With the Journey of making healthy items ,this was my first try for healthy cake.
To my Surprise this experiment was super hit !.

So lets start with the ingredients. 

Ingredients

1 cup multigrain flour 
1 cup oats flour (take a cup of Oats and grind it well)
1 1/2 tsp coffee (you can increase or decrease based on your preference of coffee taste)
1 tsp baking powder
1/2 tbsp choco powder
1 tsp vanilla extract
1 butter
1.5-2 cups of brown sugar (depending on how sweet you prefer)
2 eggs
1 cup milk
1/4 cup of raising
1/4 cup of walnut
2 Tbsp Oil

Steps

1) Keep butter outside and let it come to room temperature so that it is smooth and not liquid [This would take approx 1 hr ]

2) Dry Ingredients - Sieve Multigrain flour, choco powder, coffee, baking powder and oats flour in one vessel. Mix the mixture and keep aside.

3) Beat Butter, brown sugar and vanilla essence. Start with slow speed and mix at full speed for 5 mins.

4) Add 2 eggs and beat the mixture for another 5 mins.

5) Now slowly add the dry mixture and little milk alternately to the wet mixture and continue beating. Continue this till the entire dry mixture and milk is mixed to the final batter.

6) add the Oil and finally beat for atleast 5 more mins at full speed.

7) Mix raisins in the cake batter with help of spatula using the folding technique.

8) Pre heat the oven at 400 F 

9) cover the cake tin with Parchment Paper. Pour the batter in it.

10) Bake the cake at 370 F 50 mins or until toothpick comes out clear. 

Tip: Check with toothpick after 40-45 mins. Depending on the container the time differs.

Brown Rice Khichadi

I was wondering if we could ever use Brown Rice in Khichadi and that inspired me to make it. Guess what! It turned out Awesome !
It is super healthy and delicious Khichadi. 



Ingredients:
1) Brown Rice - 1 Cup
2) Black Split Urad Daal  - 1/2 Cup
3) Ginger/Garlic/Green Chilli Paste - 1/2 Tbsp
4) Onion - 1/2 Cup finely Chopped
5) Tomato - 1/2 Cup finely Chopped
6) Carrots( finely chopped) + Peas - 1/2 Cup
7) Coriandar - Zira Powder - 1 Tsp
8) Garam Masala -  1/2 Tsp
9) Coriandar(AKA Cilantro) - 1/2 Cup 
10 Ghee - 1 Tbsp
11) Zira - 1/2 tsp
12) Kadi patta - 4-5 Leaves
13) Red Chilli - 1 Whole Chilli
14) Salt as per your taste
15) Water
16) Turmeric - 1/4 Tsp
17) Red Chilli Powder - 1/4 to 1/2 Tsp (as per Spicy level you want)



Steps:
1) Cook Brown Rice and Black Split Urad Daal in pressure cooker with 3 times of water. Add 1/4 tsp salt and little Turmeric for cooking.

2) Heat Ghee in a Pan, add Zira, Kadi patta, and Red Chilli (Break it to half) [ Here you can add clove and cinnamon stick ]
3) Add Onion and fry till light brown
4) Then add ginger/garlic/green chilli paste and mix it well
5) Now add Tomato and half of the Cilantro and Salt (1/2 Tsp) mix everything well. Allow this to cook for 5 mins on medium flame.
6) Now add Carrot and Peas and turmeric. Mix everything and allow it to cook for another 5 mins.
7) Now add red chilli pwder, coriander - zira powder and garam masala and 1/2 Cup water and mix everything well. Cover the pan and let it cook for 1-2 mins
8) Now add cooked Brown Rice and Urad daal Mix into the Pan and mix well everything. At low flame let the khichadi cook for 2 mins.



Tadda Khichadi is ready!! Use the remaining Coriandar for garnishing on top and server hot.


Palak Halwa

Being a Big Fan of Master Chef, this is the first recipe i tried following it. I never thought Palak as a dessert, but after making this Halwa it has become my Favorite Sweet !


Ingredients :
1) Palak - 1 Bunches
2) Ricotta Cheese - 200 gms 
3) Khoya - 1 Cup
4) Cinnamon Powder - 1 Tsp
5) Fresh Berries (Strawberry, Blue Berry, Cranberry etc any Berry of your choice) 
6) Sugar - 1 Cup
7) Milk - 1.5 Cup
8) Basil Leaves - 4-5 leaves (Optional) 
9) Pistachio (Chopped) 

Steps :
1) Boil Milk, add Palak and Basil Leaves in milk and cook till Palak becomes soft. 
2) Filter the milk and then crush cooked Palak and Basil Leaves to make a smooth paste. Keep this paste aside for now.
3) Heat a pan and add Khoya let it become little soft. 
4) Then add the Palak-Basil Paste to it and keep stirring every min till Palak is cooked well.
5) Now add Ricotta Cheese and mix it well
6) Add Cinnamon powder, Pistachio. Mix everything and cook for 2-3 Mins.
7) Now add fresh berries and mix it well. Turn of the Gas and leave it for 1 Min.
8) Now transfer the Halwa to the serving Bowl and decorate with Fruits, Pista or Basil Leaf (as per your creativity)

Once it cools down its ready for serving. I didn't like it hot, but you can also serve hot if you like it :).

Mango Barfi

With start of Summer I always remember my favorite fruit Mango (The King of Fruits). Yumm!! Just Love It ! As I am sweet lover, thought of trying some quick and different sweet, so here is a simple barfi recipe. 




Ingredients

1) Mango Tin Ras  - 1.5 Cup ( If you have time you could also take fresh Mango and make Mango Pulp and add Sugar to the pulp equivalent to the quantity of pulp , i.e 1:1 it can vary if you like more or less sweet)
2) Paneer - 1 Cup
3) Milk Powder - 1 Cup 
4) 1 Tsp Ghee for greasing 
5) 1 Cup dry fruits (add of your choice - Pistachio (Pista), Almond (Badam), Cashew (Kaju) ) 
6) Cinnamon Powder - 1/8 Tsp
7) Cardamon Powder - 1/4 Tsp


Steps:

1) Take a pan and heat it up.
2) Now add Mango Ras [OR Mixture of Sugar and Mango Pulp] and Paneer
3) At medium flame continuously stir the mixture till 15-20 mins.
4) Now add Milk Powder and stir till the mixture combines well (should be like a loose dough)
5) Add cinnamon powder, cardamon powder and half cup dry fruits and mix it well 
6) Take a plate and grease it with ghee
7) Place the barfi mixture in the plate and tap it well. 
8) Garnish with remaining dry fruits and press little so it sticks well to the Barfi.
9) Let it cool down and then cut into pieces.

Healthy and Delicious Cookies


Ingredients 

1) Sugar                                     - 1/2 Cup
2) Brown Sugar                         - 1 Cup
3) Cinnamon powder                 - 1/4 Tsp
4) Baking powder                      - 1 Tsp
5) Flaxseed powder                    - 1 TbSp
6) Nutmeg powder                     - 1/4 Tsp
7) Vanilla extract or Essence     - 1 1/2 Tsp
8)  Salted butter                          -100-115 gms
9)  Dark chocolate powder         -1/2 TbSp (Optional)
10) Oats Flour                            - 1 Cup
11) Oats                                      - 1 Cup
12 ) Multigrain flour                  - 1 Cup
13) Raisin                                  - 1 Cup
14) Milk (use as per need)         - 1/2 Cup






Steps:

1) First mix all dry ingredients in one bowl - Multigrain Flour, Oats Flour, Oats, flaxseed, nutmeg, baking powder, cinnamon powder, chocolate powder, raisin

2) In other bowl take all wet ingredients:
 Stir butter (before using bring the butter to room temperature so its soft enough to mix) with help of hand blender. Add both the sugar, vanilla extract and stir on high speed for atleast 10 mins. Ensure the mixture is good and looks like paste.

3) Now add the dry mixture half cup each time and keep stirring continuously.

4) Add milk as per need. (if the mixture is very dry and not binding then milk would help)

5) now let the dough stay for 10 -20 mins.

6) Parallel Pre heat oven at 400 F - This will take approx 10- 15 mins

7) make small balls and place in cookie tray. Ensure all the balls are of same size. Keep some space in between each ball as on heating it will spread.

8) Bake for 15-20 mins based on how crunchy you like.
